What's for Dinner? One Pan Chicken Skillet
A delicious and easy recipe from Crossroads Chef Director, Brittney Horn, as recently demonstrated at a local community event.
One Pan Chicken Skillet

Ingredients:
- 1 Tbsp olive oil
- 4 cloves minced garlic
- 8 ounces mushrooms, sliced
- 3 chicken breasts, diced
- 1 bell pepper, chopped
- 1 small red onion, chopped
- ½ bunch asparagus, chopped
- 1 small zucchini, sliced
- 1 Tbsp Italian seasoning
- 2 Tbsp Balsamic vinegar
- 2 Tbsp dried or fresh chopped basil
- ½ cup parmesan cheese
- 2 cups cooked tri-color quinoa
Directions:
(1) Cook quinoa according to package (for more flavor use stock instead of water)
(2) Heat oil over medium heat in a large skillet. Add mushrooms and garlic, sauté for 5 minutes until liquid starts to release. Add chicken and cook another 5 minutes until browned. Add Italian seasoning, balsamic vinegar and basil.
(3) Add veggies and continue to cook for 5-10 minutes until veggies are tender and chicken is 165*F internally.
Serve over quinoa and Enjoy.
